“İZMİR” catering service (“DİA” Holding)
The catering service is carry out in territory of “Dia holding”.
Special for catering service is equipped: the kitchen, 2 canteens and also subsidiary premises. The duties of “İzmir” catering service include the maintenance with ready food of the personnel (700 persons), 3 times a day (a breakfast, a dinner, a supper), within 7 calendar days.
General information:
The kitchen:
- The total area of the kitchen is 200 м2 .
- The kitchen is equipped by all necessary equipment of high quality (ovens, furnaces, devices for doner, a distributing line etc.) ,that promotes fast and qualitative service.
- On the kitchen and warehouse are established 10 freezers and refrigerators.
- The each meal is being cooked in designated utensils, stored in designated containers and stirred with the designated ladles in order to prevent cross contamination.
- The sample of each meal is taken and placed for 24 hour storage onto the designated shelf in the fridge. In case of any food poisoning occurred at client facility, all meal samples shall be sent for testing in the designated laboratory.
- The overall thorough cleaning of kitchen premises (walls, floor) is carried out on the daily basis at the end of the working day.
- Pest control is carried out at all facility premises.
The service personnel:
- The total of attendants are 45 persons:
- 1 chief cook, 2 cooks, 1 doner maker, 8 assistants of cook, 10 distributors of food, 10
waiters, 4 cleaners, 2 tea makers, 7 dishwashers.
- The exterior of the personnel of the kitchen and service are tidy and all works are carry
out in hygienic gloves.
- All personnel at the restaurant and all personnel involved in cooking process are passing medical screening.
- The all staff involved in food cooking and service process have trained and passed the basic course of personal hygiene, and also hygiene in manufacturing the foodstuffs by HACCP standards.
The canteen:
- In territory of “Dia” holding is established 2 canteens:
- The first canteen is intended for builders (about 600 workers), and total area of this canteen is 600 м2.
- The second canteen is intended management of holding (about 100 workers), and total area of this canteen is 200 м2 (including rest room).
- The canteen is equipped by all necessary equipment and furniture.
Suppliers and warehouse:
- The total area of the warehouse is 40 м2.
- All products stored in warehouse, are checked for the term of the validity, packing, and conditions of storage.
- Temperature and humidity in warehouse is checked on a regular basis, for prevention of damage of products.
- Pest control is carried out on a regular basis.
- All taken from the supplier or purchased goods have quality certificates.
The overall thorough cleaning of all premises is carried out on the daily basis at the end of the working day.
Checking food quality, conditions of service, observance of hygiene by attendants, performance of the duties, etc., are checked by management on regular basis and in case of any rejections from the specified norms or complaints from the served personnel immediately are taking measures on elimination of problems or complaints.
